STOUT BROWNIES
INGREDIENTS
- 1 c. all-purpose flour
- 3/4 c. unsweetened cocoa powder
- 1/4 tsp. salt
- 6 tbsp. unsalted room temperature butter, cubed
- 8 oz dark bittersweet chocolate, chopped
- 3/4 c. white chocolate chips
- 4 large eggs, at room temperature
- 1 c. superfine or granulated sugar
- 1/2 c. chopped pecans (optional)
- 1 1/4 c. stout beer
- 1 c. semi-sweet chocolate chips
DIRECTIONS
In a large bowl, whisk together flour, cocoa powder, and salt until evenly combined. Melt
butter, bittersweet chocolate, and white chocolate chips in a double-boiler over very low
heat, stirring constantly until melted.
Remove from heat. In a separate bowl, beat eggs and
sugar on high speed for 3 min.
Add melted chocolate mixture, beating until combined. Beat
flour mixture into melted chocolate mixture, add chopped pecans. Whisk in stout beer.
Pour
batter into 9" x 13" prepared baking pan lined with non-stick foil. Drop semi-sweet chocolate
chips evenly into the pan. Bake at 375°F for 25 to 30 min. on centre rack in the oven.
Let stout brownies cool, uncovered, to room temperature.
Yields 36 to 48 brownies
